@Work: Kendrick's and Truffles

March 10, 2005 – "Somebody has to do it," says David Kendrick about the 10 to 12 hours a day he works six days a week.
David and his wife Jane have been running Kendrick's restaurant in the Quin House on King Cross Street in downtown Christiansted for 20 years.
Running one restaurant known for its elegance was not enough for the Kendricks. The couple took over a second restaurant two years ago.
They now also own and operate Truffles, upstairs at 52 Company Street. This restaurant was formerly known as the Top Hat.
David runs back and forth between the two restaurants. They are actually just located around the corner from each other. He spends much of his time in the kitchen. Jane spends her time greeting and seating customers.
He is proud that his recipes have been featured in the magazine Bon Appetite.
Dishes specially prepared by David, such as macadamia encrusted mahi-mahi and peanut butter and dark chocolate cheesecake, are just samples of the treats at Truffles.
The couple aims to bring superior service to their customers. They advertise, "While you wait for your order's individual preparation we hope you'll enjoy Kendrick's ambiance, the company of your friends and the anticipation of a fine meal thoughtfully prepared."
Indeed dining at Truffles one feels transported to a time when life in the Carribean was run at a little slower, more appreciative pace, and life was a bit grander.
Dave said even with both restaurants, "We find the time to do what we have to do. We find time to be with the kids."
The couple also slows down a bit in the summer when they have closed down one of the restaurants.
The couple came to St. Croix in 1977. They operated the night club Grandstand Play from 1980 to 1988.
At Kendrick's the bar opens at 5 p.m. and dinner is served Monday through Saturday from 6 to 9:30 p.m.
Truffles has lunch hours Monday through Friday plus the same dinner hours as Kendrick's.
Truffles is closed on Monday and Kendricks is closed on Sunday. In a recent interview Dave "complained" about getting too much sun on Buck Island on a Sunday. He said, "I just could not get enough of it."
