American Airlines Introduces a Taste of the Islands

Sept. 18, 2008 – Beginning this week, American Airlines' first and business class customers traveling from the Caribbean can enjoy a taste of the islands in-flight through freshly updated menu offerings that incorporate many local Caribbean flavors. Chef Cindy Hutson, owner of highly regarded restaurants in Coral Gables, Florida, and Las Vegas, that feature Caribbean cuisine, collaborated with American Airlines to design the new menu selections. She demonstrates the virtues of a flavorful combination of fish, fruits, vegetables and traditional tropical seasonings.
This week, American will begin to rotate the following island delicacies on a monthly basis:
· East Indian Chicken – chicken served with diced pumpkin squash and Jamaican rice and peas.
· Stir Fried Chicken – curried chicken atop stir-fried vegetables and noodles drizzled with Ortanique rum sauce, with snap peas and red and yellow peppers.
· Jerk Pork Tenderloin – tenderloin of pork seasoned with jerk spices, offered with broccoli, sweet potato hash and a rum guava sauce.
· Curry Chicken – curried chicken on a bed of jasmine rice served with green beans and a red Thai curry sauce, garnished with red and yellow peppers.
· Guava Barbecue Salmon – fillet of seared salmon with guava barbecue sauce offered with blanched carrots, julienned zucchini and roasted potatoes.
· East Indian Pork – tender pork tenderloin and Jamaican rice and peas complemented with East Indian curry sauce and a side of chayote and carrots.
Cindy Hutson focuses her culinary talents on the lighter side of fusion cooking. In 1999, Hutson opened Ortanique on the Mile in Coral Gables, Florida. Her restaurant offers diners authentic Caribbean cuisine with a fresh, light attitude, a concept reflected in a menu of island delicacies such as ceviches, salads, bouillabaisse, meats, fishes and delectable desserts. In September 2001, Ortanique opened in Las Vegas at the Paris Hotel. In 2006, it received an extraordinary rating from Zagat, in addition to numerous accolades during the past nine years from the Miami Herald, Bon Appetit, Gourmet Magazine, Food & Wine Magazine and Esquire Magazine.
