At Work: The Pink Spot

The trendy spot for tasty tapas, delicious drinks and laughs Emily and David Micheal Lopez outside The Pink Spot.appears to be The Pink Spot at 17 Strand Street in Frederiksted. Emily and David Micheal Lopez opened the doors to the Pink Spot in February, on Super Bowl Sunday.

Emily said the Pink Spot provides a different type of menu on St. Croix and different hours, and has been well received ever since opening. They serve tapas, appetizer size portions and they are open Mondays, unlike most local restaurants. And they provide a live comedy night the third Tuesday of the month.

Emily said they had noticed people starting to gather in Frederiksted

“We wanted to bring the community together and tie all the businesses together,” Emily said. “Things get stagnant after a while so we wanted to provide something new and different.“

David Michael said opening The Pink Spot was like connecting the dots between east and west. He encourages people to head west for love, smiles, positive attitudes, great drinks and good food.

Emily said they came up with quite a few names, but in the end it was pretty straight forward, “We are in the pink spot.”

Emily said David Michael is the creative genius behind the business.

David Michael grew up in the restaurant business, working at his family’s Mexican restaurant – Mitla Cafe on Route 66 in California; there since 1937. He said he learned to work for a living and did not have things handed to him. He was a theater arts major and has worked at a few different jobs, such as construction and at Harley Davidson stores, also as an e-commerce manager.

The couple, residents of St. Croix for 10 years, are both employed at the Mega Management Advisors LLC which started out as a customer service call center for motorcycles. The call center recently moved stateside. Emily said they have now branched out and refocused with the restaurant.

The Pink Spot has plenty of space inside and outdoors on the patio.There is plenty of seating inside the old Danish building and seating at a softly landscaped, lattice-covered courtyard. Often, the sun can be seen colorfully setting in the sea from the seating on the waterfront. Five other employees are involved with the restaurant. The hours are 3 to 10 p.m. Friday and Saturday, noon to 9 p.m. Sunday, and 3 to 9 p.m. Monday and Tuesday. The Pink Spot is closed Wednesday and Thursday.

Emily said the only challenge she has running the business is finding enough family time. The couple has three children, ages 12, seven and one.

“Chef” Teny, known for his sauces, served the Source reporter a juicy chicken kabob made with marinated chicken breast, onion and red pepper. It came with a side of tasty blue cheese coleslaw. Most items on the menu are appetizer sized, but the “big sloppy” – a pork shoulder, marinated and roasted, then topped with bacon, ham and pepper Jack cheese – is huge. Folks can order a number of dishes to get a good sampling of the tapas.

At the Taste of St. Croix in April, The Pink Spot took third place for a sage-infused Jameson’s whiskey.

The Pink Spot donated a portion of its proceeds Sunday to the Queen Louise Home for the Kayak for Kids event to help the community.

On Father’s Day they will serve pork specials, and drinks for dad will be two for the price of one.

David Michael said the couple’s focus is to give the feeling of a big city – on St. Croix.
